- DID YOU KNOW... That the terms “light roast” and “dark roast” are amazingly non-specific descriptors about what type of flavor a coffee will yield. During Pyrolysis, the roasting process, the darker a coffee is roasted the more acidity and body is roasted out of the bean. As the sugars carmelize in darkly roasted coffee, the hints of tobacco, earthiness, and almond tend to become more pronounced. Lightly roasted coffee has more caffeine, more body, and will generally give you a fuller profile of the coffee’s flavors. Of course, this is very generalized, as different origins (Ethiopia vs. Brazil) are going to give you different flavors regardless of the roast, it’s important to understand the basics. My coffee tip, would be to think about what in coffee you love. The sweetness? The caramel notes? The berry? And ask your friendly barista what they recommend.
-RECIPE OF THE MONTH- The drip brewing, or home brewing, method of making coffee extracts a lot of caffeine out of the grounds and has a tendency to “overextract”; producing a bitter, almost flavorless brew, with little body, and little verve. This is one reason, along with the scarcity of coffee in the 1700’s during the spreading colonization in the south, that people began adding chicory to their coffee. Chicory is the roasted root of the endive plant, and can turn a lifeless brewed coffee into something totally different. Up for something new? Add a little into your morning grounds, and take a spin down chicory lane (start small, only 2 tsp for 4cups brewed coffee).
